[Kishu Sansho] Ripe Red Sansho / Dried Sansho Grains 500g

This is a rare red sansho pepper made from fully ripened grape sansho pepper, a specialty of Kishu Wakayama.
Aside from the size of its berries, budo sansho is known for its particularly rich aroma and strong spiciness.
Known as the "green diamond," budo sansho boasts the highest quality among the many varieties of sansho.
This fully ripe red sansho is harvested after the grape sansho has been allowed to ripen until it turns red.

Green sansho pepper harvested in early summer is characterized by a refreshing flavor and spiciness, while fully ripe red sansho pepper has a slightly sweet aroma and little astringency.
It has the fruity, mellow aroma that is characteristic of fully ripe fruit, yet retains its spicy, tingling flavor.
Fully ripe red sansho pepper has a longer-lasting flavor than green sansho pepper, and is recommended for those who want to enjoy the lingering flavor of sansho pepper for a long time.
If you grind it into powder using a powder mill or mortar, a rich aroma will rise up. The refreshing taste of ripe red sansho pepper can be used in a variety of dishes, including grilled eel, grilled fish, steak, seafood carpaccio, cold tofu, udon, and soba. It is a particularly effective spice for removing the odor of fish and meat, but just a sprinkle of it will add depth to the flavor of your dish.
