Dried Japanese pepper

Dried sardines with Japanese pepper are the perfect accompaniment to rice, and have a refreshing Japanese pepper flavor.
Once made, it will keep in the refrigerator for about 10 days, so you can serve it as is as a snack with alcohol, use it as a rice ball filling, mix it into fried rice, and use it in a variety of dishes.

<Ingredients>
100g dried small sardines
3 tablespoons Japanese pepper berries (soaked in soy sauce)
2 tablespoons mirin
100ml sake
1.5 tablespoons soy sauce
1 teaspoon sugar

<How to make>
1. Place the dried small sardines in a bowl and soak in water for about 1 minute.
2. Add mirin, sake, soy sauce, and sugar to a pot and bring to a gentle boil.
3. Add the dried small sardines to the pot, stir, and bring to a boil, then reduce heat to low.
4. After simmering for about 1 minute over low heat, add the prepared sansho berries (which have had the bitterness removed) to the pot.
5. Keep the heat low and simmer until the liquid has completely evaporated.
