Kishu Wakayama boasts the highest production of Japanese pepper in Japan.
"Kishu Kou Sansho" is made by removing the seeds from grape sansho harvested in Wakayama Prefecture and drying it.
The black seeds of Japanese pepper contain a lot of fat, which provides an energy source for germination.
By removing most of the seeds (about 95%), oxidation of the skin is prevented, preserving the mellow aroma that is unique to budo sansho.

If you grind dried sansho peppercorns in a mill or mash them in a mortar and pestle, a refreshing citrus aroma will instantly rise up.
The fresh aroma of Japanese pepper and its tongue-numbing spiciness enhance the flavor of the dish, giving it a deep taste.

Sansho pepper is often thought of as a Japanese spice, but it matches any type of cuisine, whether Japanese, Western or Chinese.
It can be used as a condiment for the classic grilled eel, as well as grilled fish, steak, udon, soba, and tofu dishes.
It also works great as a secret ingredient in potato salad, miso soup, pasta, and dressings.
Dried Sansho pepper can be ground into powder as much as you need, allowing you to enjoy the rich aroma and characteristic spiciness of freshly ground pepper at any time.
