Capturing the Freshness of Harvested Sansho Berries
This premium product uses Budo Sansho, the famous sansho pepper from Wakayama, Japan’s top sansho-producing region. Freshly harvested green berries are quickly frozen and processed using advanced freeze-drying (vacuum freeze dehydration) technology. By removing only the water content under vacuum, the vibrant color, refreshing citrus-like aroma, and sharp tingling spiciness are preserved at their peak—something conventional drying methods often fail to achieve.

When rehydrated in water, the freeze-dried sansho expands to about seven times its dry weight, restoring the fresh taste and aroma of raw sansho berries.

Versatile Use: Rehydrate or Grind into Powder

  • Rehydrate to use in classic dishes such as chirimen sansho, simmered vegetables, or homemade soy sauce and oil infusions.

  • Crush directly into powder for a freshly ground sansho experience, ideal for topping grilled eel (unagi kabayaki), yakitori, karaage, tempura, or ramen.
