Wakayama Prefecture is Japan’s leading producer of sansho (Japanese pepper), accounting for the majority of domestic production. Among the many varieties, the Budo Sansho (literally “grape sansho”) is highly prized. Its large, plump berries grow in clusters like grapes, and it is renowned for its citrus-like fragrance, rich flavor, and tongue-tingling spiciness, making it the highest-quality Japanese pepper.

What Makes “Kishu Ko Sansho” Special

Our Kishu Ko Sansho uses only carefully harvested Budo Sansho from Wakayama. The peppercorns are dried after removing approximately 95% of the black seeds. These seeds naturally contain oil, which accelerates oxidation and causes the fragrance to fade over time. By removing them and using only the aromatic fruit peel, we are able to preserve the fresh, vibrant aroma and sharp spiciness unique to Wakayama’s premium sansho.
