A Rare Spice from the Heart of Wakayama

Wakayama Prefecture is Japan’s leading producer of Budo Sansho (Grape Sansho Pepper), renowned for its large berries, rich fragrance, and sharp spiciness. Often called the “Green Diamond” of Japanese spices, Budo Sansho is treasured in both traditional cuisine and modern gastronomy.
Among them, the most prized variety is the Fully Ripe Red Sansho, harvested only after the berries mature and turn a vibrant red on the tree. This rare spice is available only for a short period each year, making it a true luxury for spice lovers.

How Red Sansho Differs from Green Sansho

Most sansho is harvested in early summer (July–August) while still green, delivering a refreshing citrus-like aroma and sharp pungency.
In contrast, Fully Ripe Red Sansho is picked later in the season (September onward), after the berries have fully ripened. It offers:

  • A fruity, sweet aroma with fewer bitter notes

  • The signature tingling spiciness of sansho, but with greater depth
