Wakayama Prefecture is Japan’s leading production area for sansho (Japanese pepper). Among its many varieties, the Kishu Budo Sansho is the most renowned. Its berries grow in large clusters resembling grapes, with thick skins, a rich citrus-like fragrance, and a sharp, tingling heat. The Rarity of Fully Ripe Red Sansho
While most sansho is harvested in early summer as fresh green berries (ao-zansho), ripe red sansho (aka-zansho) is left on the tree until autumn when the berries turn a natural red hue. Harvesting is done carefully by hand, and only a limited number of farms are able to produce it. As a result, red sansho is exceptionally rare and commands high value in the market.
